I have really taken a love for lettuce wraps. I love regular wraps, but they can be carb heavy and also feel heavy after eating them. Lettuce wraps are light and perfect spring and summer, and they are great for helping you fit into your skinny jeans!
Salads make up a large portion of my diet – for several reasons and lettuce wraps are a great way to shake things up.
Even though this recipe is for lettuce wraps, I have also used the chicken and raspberry dressing on a traditional salad – they are both great!
Using a food processor or blender, blend pistachios, raspberry jam, apple cider vinegar, olive oil and juice from orange until smooth.
Season with salt and pepper to taste.
Wash butter lettuce leaves. Shred chicken into bite-sized pieces.
Place chicken in lettuce cups, top with spinach, and drizzle with raspberry dressing.
Have it for dinner and take leftover for lunch the next day!
